Maple-Pecan Granola

If you know us, you’d know there’s always granola in our fridge🙈 But this granola variation has been on repeat for over the past 3 months. It’s genuinely eaten every day and we’re slightly addicted🫣 It’s also super easy to make, with simple, minimal ingredients :)


✨Ingredient spotlight✨

OATS: great whole-grain source of carbs, soluble fiber, vitamins & minerals

PECANS: a good source of the antioxidant, vitamin E, protecting your cells from damage

CINNAMON: promotes blood sugar regulation, an antioxidant, & has anti-bacterial & anti-fungal properties

GRASS-FED BUTTER: rich in vitamin A (vital for eye health, immune function, reproduction & more), beta-carotene (antioxidant), & a great source of healthy, unsaturated fats


INGREDIENTS:

  • 2 cups rolled oats

  • 1/2 cup chopped pecans

  • very generous amount of cinnamon

  • 1/4 tsp sea salt

  • 1/4 cup melted grass-fed butter (trust me on this, it makes it taste sooo good; I use the brand ‘Kerrygold’) or you can use coconut/avocado oil

  • 3-4 tbs maple syrup

  • 1 tsp vanilla

METHOD:

  • preheat oven to 325 degrees

  • in a mixing bowl add oats, chopped pecans, cinnamon, & salt

  • melt butter or oil and stir in maple syrup & vanilla

  • add the liquids to the dry ingredients, & mix until it’s all combined

  • line a baking tray with foil or parchment paper & press down mixture evenly

  • bake for 25 minutes, allow it to cool, break it all up, & enjoy!😋

Our favourite ways to eat this granola is with my daily yogurt bowl, with milk as cereal, or with apples & nut butter.
